- This menu carries no list prices. We quote a cocktail event by the piece once we know the count, the room, and how long service runs — a two-hour standing reception and a one-hour cocktail hour before dinner are very different orders off the same page.
- For a one-hour cocktail hour before a seated dinner, four to six pieces per guest is the working number, spread across five or six items. If the bites are the meal, plan on roughly double and widen the list so nobody eats four of the same thing.
- Several of these are fried or go out hot — the cheese ravioli, the lobster mac bites, the popcorn chicken, the crab fritters. They want a kitchen, or at minimum power on site. At a raw venue with neither we will build your list out of the cold bites rather than send out something that has been sitting in a chafer for an hour.
- Staffing follows the service style, not the menu. Stationed food runs about one server per twenty guests. Passing trays through a standing room takes more than that, because somebody has to keep walking.

For a one-hour cocktail hour before a seated dinner, four to six pieces per guest across five or six items is the working number. If these bites are the whole meal, plan on roughly double and widen the list. Treat both as a guide rather than a guarantee — a room that has been drinking since four eats more than a lunch crowd, and we would rather adjust the count with you than have you find out at nine.
